Banana Cue Split with Ube Ice Cream Recipe
A banana cue is a local street food in the Philippines that is made of deep fried saba (sweet plantain), coated with caramelized brown sugar, and sold skewered on bamboo sticks. Adding the concept of caramelized sugar will give the traditional banana split an extra crunch and complexity that will make it hard to go back to the original. The best part is that it only takes one extra step!
Equipment
- Kitchen torch
- Small baking tray
- Parchment paper
Ingredients
- 1 Ripe Banana
- 2 tablespoons White Cane Sugar
- 3 scoops
Cheska's Premium Ube Ice Cream - 1 can of Whipped Cream Topping
- 1 tablespoon Crushed Peanuts
- 1 tablespoon Chocolate or Caramel Syrup
- 1 Maraschino Cherry with Stem
Instructions
- Peel the banana and slice lengthwise discarding the hard ends.
- Cover your small baking tray with parchment paper for easy clean-up and place the sliced banana smooth side up.
- Sprinkle your white cane sugar on the banana until it is well coated then evenly torch the sugar until it has melted into hard caramel or golden brown.
- On your bowl, place 3 scoops of Cheska’s Premium Ube Ice Cream in a row and sandwich it with your banana cues making sure to place them caramel side facing out for a better presentation.
- Top your creation with 3 mounds of whipped cream, a good drizzle of the syrup of your choice, some crushed peanuts, and a beautiful cherry on top. Enjoy!
Notes
- You can add more flavors of ice cream to make this simple dessert even more festive. We suggest using Cheska’s Premium Cheese Ice Cream and Cheska’s Premium Avocado Ice Cream to get a full Filipino fiesta of flavors.
- Banana splits are supposed to be fun so if you want to add more toppings like sprinkles and cookie crumbles, go for it!
