Palitaw with Mango Ice Cream Recipe

Palitaw, which comes from the Filipino root word litaw meaning “to surface”, is a chewy rice snack traditionally made by soaking glutinous rice overnight and grinded until it forms a smooth dough. This dough is then flattened into small discs, boiled in water, and removed when it floats. This pillowy soft dough is then rolled on freshly grated coconut, sugar, and roasted sesame seeds.

Ingredients
  

  • 12 scoops Cheska's Premium Mango Ice Cream
  • 4 cups Glutinous Rice Flour
  • 2-2 ½ cups Water
  • 1 cup Freshly Grated Coconut
  • ½ cup White Cane Sugar
  • ¼ cup Roasted Sesame Seeds
  • Water, for boiling

Instructions
 

  • Mix glutinous rice flour with 2 cups of water with a wooden spoon until it forms a smooth dough. If the dough is too dry, gradually add the rest of the water until it reaches the right consistency.
  • Divide the dough into 24 pieces and form them into balls. Dampen your hands and flatten them using your palms to form discs.
  • Boil the water and gently place your dough in four batches. Make sure to remove the dough, using the slotted spoon, as soon as it floats.
  • Shake the excess water off.
  • In a bowl, mix together the grated coconut, sugar, and roasted sesame seeds.
  • Dip the freshly cooked dough on the coconut sugar mixture and cover all sides.
  • Serve your freshly made palitaw with a scoop of Cheska’s Premium Mango Ice Cream and top it off with a sprinkle of roasted sesame seeds.

Notes

  • If freshly grated coconut is not available, you can replace this with hydrated hydrated desiccated coconut.
